Blue Ribbon Cherry Pie

This won the Mississippi Cherry Pie Contest in 1962.

Cherry Pie Filling
1 1/4 cups granulated sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1 tablespoon soft butter
1/2 cup cherry juice
1/4 teaspoon red food coloring
1/4 teaspoon almond extract
2 teaspoons lemon juice
3 cups drained canned cherries (reserve liquid)

Combine sugar, cornstarch, and salt. Stir in butter. Combine cherry juice, food coloring, almond extract, and lemon juice. Add this mixture to dry ingredients. Add cherries and let stand while preparing pastry. Line a 9-inch pie plate with pastry; fill with cherry mixture. Make lattice top; flute edges. Cut a 3-inch strip of aluminum foil and fold loosely around the edge of the pie. Bake at 400 degrees F for 50 to 55 minutes.

Rich Pastry
2 1/4 cups sifted flour
1 teaspoon salt
1 tablespoon granulated sugar
2/3 cup shortening
1 egg yolk
1 tablespoon lemon juice
1/3 cup milk
1 egg white

Sift flour with salt and sugar. Cut in 1/2 shortening until mixture resembles cornmeal. Cut in other 1/2 until mixture resembles large peas. Beat egg yolk and lemon juice together. Blend in juice and milk. Add to dry ingredients, tossing with a fork into a soft dough. Form into a ball. Divide ball into halves. Roll first half to 1/8-inch thickness. After putting dough into pie pan, brush bottom with egg white. Roll second half out and cut into strips to make lattice top.

Strawberry Strips

1 frozen puff pastry strip (or make your own pastry)
2 teaspoons granulated sugar
1/2 recipe Pastry Cream
1 pint medium size strawberries
1/4 cup strawberry jelly
1 teaspoon granulated sugar
2 tablespoons chopped pistachio nuts or other nuts

Make pastry and cut into strips about 2 inches long and 1 inch wide. Bake in oven at 350 degrees for approximately 10 minutes. Cool.

Spread Pastry Cream on each strip. Top with strawberries, pointed end up, 2 to a row. Melt strawberry jelly with 1 teaspoon sugar. Let bubble 1 minute; cool slightly and glaze each strawberry. Sprinkle nuts down sides of each strawberry strip.

Pastry Cream
1 small box French vanilla or
    plain vanilla instant pudding
1 cup milk
2 tablespoons cognac or brandy
1/2 cup heavy cream

Prepare pudding mix using 1 cup milk; fold in cognac or brandy. Beat heavy cream until it forms soft peaks. Fold into pudding mix. Cover with plastic wrap. Cool.

Crunchy Oven Fried Fish

1 pound cod fillets
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon lemon pepper
1 egg white
1/4 cup dry bread crumbs
1/4 cup cornmeal
1 1/2 teaspoons lemon peel, grated
1/2 teaspoon basil

Cut fish into serving-size pieces.

In a shallow dish, combine flour, salt and lemon pepper and set aside.

Beat egg white until frothy and set aside.

Combine bread crumbs, cornmeal, lemon peel and basil. Dip one side only of fish fillets into flour mixture, shaking off excess. Dip into egg white, then coat with bread crumbs.

Spray a shallow baking pan with nonstick cooking spray. Place fillets in baking pan coating side up, tucking under any thin edges.

Bake at 450 degrees F for 6 to 12 minutes or until fish flakes easily with a fork.

Serves 4.

Spiced Whipped Cream

1 cup heavy cream
3 tablespoons confectioners’ sugar
1 teaspoon cinnamon
1 teaspoon ginger

Whip cream until stiff. Add remaining ingredients, and mix again.

Hamburger Goulash

1 1/2 pounds ground beef
2 cans stewed tomatoes
1 can corn
1 can tomato sauce
1 medium onion, chopped
8 ounces flat noodles
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon granulated sugar
Shredded cheese (your choice)

In a large skillet, brown hamburger and onion. Drain. Season with salt, pepper, garlic powder, oregano, basil and sugar to taste. Add tomatoes, corn and tomato sauce. Add noodles to the skillet. (Add about one cup of water if necessary to almost cover the noodles.) Cover and cook for 20 minutes, stirring occasionally.

Uncover and cook an additional 20 minutes or until noodles are soft and most of the liquid is absorbed. Top with shredded cheese for the last 3 to 5 minutes until cheese melts.

Creamsicle Pie

2/3 cup boiling water
1 small box orange gelatin
1/2 cup cold water
Ice cubes
1 (8 ounce) container Cool Whip?
6 ounces shortbread crust
Cool Whip? (for garnish)
Orange slices (for garnish)

Stir boiling water into gelatin in large bowl for 2 minutes or until dissolved.

Mix cold water and ice to make 1 1/4 cups. Gradually add to gelatin, stirring until slightly thickened (consistency of unbeaten egg whites). Remove any remaining ice.

Stir in the container of Cool Whip with a wire whisk until smooth. Refrigerate 10 to 15 minutes or until mixture is very thick and will mound. Spoon into crust. (There is likely to be some left over.) Refrigerate 3 hours or until firm.

Decorate top of pie with Cool Whip and orange slices just before serving.

Pina Colada Upside-Down Cake

1/2 cup butter or margarine
1/4 cup light brown sugar
1 (20 ounce) can sliced pineapple
Maraschino cherries
1 (18.25 ounce) box yellow cake mix
1 cup Heublein pina colada
1/2 cup water
2 eggs
1/2 cup flaked coconut

Topping
1 cup heavy cream
1/4 cup pina colada

In 13 x 9-inch pan melt butter. Sprinkle brown sugar over butter. Arrange the drained pineapple slices over the brown sugar. Place a cherry in the center of each slice.

Combine cake mix, pina colada, water and eggs, mixing according to package directions. Fold in coconut. Pour batter over pineapple. Bake at 350 degrees F for 40 minutes. The cake should be springy to touch. Invert immediately on a plate.

For topping: Beat together cream and pina colada. Serve over warm cake.

Chile-Orange Glazed Oven-Roasted Turkey

3 tablespoons ground dried New Mexico or
    California chiles (or 3 tablespoons chili powder)
1 (12 ounce) can frozen orange juice concentrate, thawed
2 tablespoons grated orange peel
1 teaspoon ground cumin

Mix ground chiles (or chili powder), orange juice concentrate, orange peel, and cumin.

The last 20 minutes the turkey cooks (at bone, the temperature in the breast will be about 150 degrees F for birds up to 18 pounds, 115 degrees F for birds over 18 pounds), spread glaze generously over turkey.

Continue to cook until a thermometer inserted into the thickest part of the turkey breast to the bone registers 160 degrees F; if glaze starts to get very dark, drape dark areas with foil.

Yield: Enough to glaze a 12 to 24-pound turkey.

Gator’s Plaza Cafe Jalapeno and Bacon Baked Oysters

1/4 pound bacon, chopped
1/2 diced red onion
1/2 diced red bell pepper
1/2 diced green bell pepper
1/4 cup flour
1 1/2 cups heavy whipping cream
1 1/4 cups milk
1/4 cup freshly grated Parmesan cheese
1 to 2 tablespoons jalape?o peppers, chopped
Oysters

Saut? bacon, onion and bell peppers until soft. Remove from heat and add flour, stirring until well blended.

Over medium heat, gradually add cream and milk stirring constantly until thickened.

Add peppers and cheese. Season to taste and adjust peppers to achieve the heat you like. Top oysters with mixture and bake for 10 minutes at 350 degrees F.

NOTE: Sauce may be made up to two days in advance.

Queso Fundido with Shrimp

12 ounces queso blanco
2 garlic cloves, minced
1/4 cup lime juice
5 drops Tabasco sauce
24 medium shrimp, cooked and peeled

Slowly melt the Queso Blanco, either in the microwave or over a low flame. Stir continuously with a wooden spoon. When almost melted, add the garlic, lime and Tabasco sauce, and heat through. Place shrimp on skewer and dip into cheese mixture.
